"something he'll eat..."

Mr-twoplus is now learning to express his views more on food. Well, he has been doing so since he was one plus, but now all the more. Without hesitation, he would go right up to his dad and try to take away his piece of lemon butter cake. "That's my cake, son," that kind of protest hardly have any effect. Mr-twoplus had managed to wrangle some cake out of his hand and was happily stuffing his mouth with it.

Maybe mr-twoplus has been exposed too much to different foods. I wonder...
At one plus, he voraciously gobbled up the pot roasted chicken with grilled veges. Finishing that (huge protion for his age), he grabbed my fork which was has a small slice of steak on it, and wrangled it up to his mouth. Happily chomped on it. That was almost a year ago. Almost.

Bananas, watermelon, apples, papayas, grapes, durian (a wee bit) -- at least he loves quite a bit of fruit enough to be a "fruit monster" like his parents (er, mom). That gave me a sigh of relief.
So far, raw green salads are rejected. But grilled juicy red capsicums are welcomed. Beansprouts or anyother green leafy vege - are, depending on the mood, scowled at, and cried at - if accidentally fed. He will try to wrest the mom's hand to his mouth so he can spit it out.

Today, according the father (who was on babysitting duties as mom was partying away with other ladies) - he ate the beef stew. finally.

The last time dad baby sat, mrtwoplus rejected the carefully prepared stew. The pumpkin, carrots, celery, beef - all rejected... I guess I feel guilty when I am out for an appointment, and mrtwoplus ends up hungry.

Of late, he seems to be testing his picky limits. Mom too has decided that - if twoplus is hungry enough, he should be able to eat what is on his plate. She does not mind waiting a bit longer. Mom does not want to go and cook a fresh batch of whatever just to cater to him. Let's see who will win this limit testing. (I predict mom will win. muhahahahaah).



today's quick emergency beef stew
Prep time: 20 minutes or less

500g soup beef
2 dashes of black pepper
2 bay leaves
1 tbsp olive oil
1/4 tsp sea salt
1 large yellow onion, chopped
4 large carrots, chunks
1 stick celery, finely chopped
1 whole head of garlic, cut half
2 cans (400g) of whole peeled tomatoes in juice
2 tsp chicken powder stock (mallox) mixed with 2 cups of water
additional filtered water to cover the beef


In a crock pot (slow cooker), add oil, onions, garlic, beef, pepper, salt, carrots, celery, on this order. Then pour the two cups of stock over the whole melange. Pour emough water just to cover the beef and vege. Then add in the 2 cans of tomatoes over it. Add bay leaves. Cover and leave to cook in slow cooker (crock pot) for another 4 to 5 hours. Remove the garlic skins and root areas. The garlic will turn in a yummy smoky garlic mush after the long cooking.

Put some brown rice to cook in the rice cooker with sufficient water, and you will come home to a comforting beef stew mrtwoplus and hubby enjoys eating.

This recipe is a reminder for mama not to give up on beef stew... I should be able to prepare and leave it the crock pot overnight, ready to eat the next day.
The brown rice gives a nutty crunchy texture that compliments the emergency stew well.

Good stew for winter, so will come back to it. You are right, how good to prep and forget... then voila!

The garlic is plentiful, so flavour assured. Sometimes casseroles disappoint in that area.

Nutty rice ... yum ... gimme some!
